Chocolate Sandwich Cookies with Peppermint Buttercream Filling Recipe– (Makes about 40 cookies)

Here are the ingredients you will need to get started:

For the cookies-

  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour, plus more as needed
  • 1 cup powdered sugar
  • 1/2 cup Dutch-process cocoa powder
  • 1/4 teaspoon fine salt
  • 2 sticks (8 ounces) cold unsalted butter, cut into small pieces

For the filling-

  • 3 ounces peppermint candies or candy canes
  • 2 1/2 cups powdered sugar, sifted
  • 8 tablespoons unsalted butter (1 stick), at room temperature
  • 1 tablespoon vanilla extract
