Making The Perfect Lamb Kofte With Authentic Turkish Spices

There are some types of food that pretty much everyone loves, with Lamb Kofte being just one example of this. Even vegetarians get to enjoy kofte, as they also come in cheese and potato varieties, with what is one of the most tasty dishes having broad appeal. There’s one common denominator in all of them however – turkish spices.

For the purposes of this article, we’ll assume that we’re using lamb and we’re sure that the end result will leave your mouth watering. Lamb is great for kofte in general, as it’s more able to retain its flavor over and above the aromas of the spice.

When visiting your local butcher, be sure to tell them what you’re using your lamb for, as they’ll likely give you mince with enough fat inside to make your kofte stick together whilst on the grill. If you buy yours from the supermarket, you won’t get too much insight into where the meat comes from, but if you do, stay away from anything labelled as ‘lean’ as it may fall apart whilst cooking!

Don’t Forget the Onions & Garlic!

As well as ensuring that you have the most useful of turkish spices that is kofte on your cooking ingredients list, you should make sure that you don’t forget the onions, as they’re central to the dish’s flavorful taste. Finely chopping both the onions before mixing it together with your lamb mince is important too – again for the right consistency to be achieved.

As well as kofte, some people like to add in parsley, with others preferring to add in some mint for a fresh taste. However, it’s entirely up to you what you add in – as we understand that spiciness is something of a preference that only some have.

One particular trick that some people love to use with their kofte kebabs is to add in breadcrumbs. What this does is soak up the juices and give it more than a touch of juiciness. It’s not an unusual move, especially when talking about sausages. However, we think that kofte kebabs are made by the use of turkish spices and would leave out the bread.

The Recipe You’ve Been Waiting For

Ok, so we won’t keep you waiting any longer for the recipe that we know you’ve been waiting for to create the perfect kofte kebab and remember that this is supposed to be enough for four people. So, here goes…

You will need:

  • 1 parsley bunch
  • 1 mint bunch (small)
  • 1½ tsp salt
  • 2 of the smaller onions
  • Lamb shoulder 750g
  • 1½ tsp cinnamon
  • 1½ tsp of black pepper
  • 1½ tsp ground allspice
  • 50g of toasted, chopped pine nuts
  • ½ tsp grated nutmeg

Start by grating the onions and ridding yourself of the juice before adding the finely chopped mint and parsley. Add the meat, salt and turkish spices and form them into balls, patties or fingers – your choice.

Heat it in a pan until brown and then yum them up with flatbreads and dollop or two of yoghurt.
