Directions to Get Started:
First slice and dice the Onions and Avocados, that way you are ready to add these ingredients when needed. Also prep each plate with one tortilla and cheese will be the first layer. (You can warm this combo on a separate burner, in a separate pan if you would like to melt the cheese onto the tortilla.) Also top each tortilla with black beans, you can use low sodium canned beans, just be sure to warm them up beforehand.
Take about 2 tablespoons of coconut oil (Cold-Pressed, Organic) and place in non-stick frying pan. Add chopped onion and sauté on low heat for about 2 minutes, do not over cook the onions or brown them! Add Eggs (depending on how many people you are making this recipe for). Scramble eggs with onions and season with freshly ground black pepper. Place the eggs on top of each prepared tortilla, separating the mixture so that each plate has an equal amount.
The next step in assembling this 7 Layer Breakfast Burrito is adding the avocado, garlic and salsa. Each person has a preference as to how much avocado, garlic, and salsa… so this step is better to do at the table.
