  • All-Purpose Flour – 1 Cup
  • Panko Breadcrumbs – 2 Cups

  • Honey – 1/3 Cup
  • Soya Sauce – 1/3 Cup
  • Garlic Cloves – 2, Chopped
  • Lime Juice – 1 Lime
  • Sriracha – 1 Tbsp
  • Water – 1/4 Cup
  • Corn starch – 2 Tsp
  • Green Onions – 1/4 Cup, Sliced

Procedure:

  1. Line a large baking sheet with aluminum foil and preheat the oven to 400°.
  2. Combine cauliflower and flour in a large bowl and stir until they are completely covered.
  3. Set up a dredging station in a bowl, add the panko breadcrumbs, and beat eggs in another bowl. Also, add 2 tablespoons of water.
  4. Now dip the cauliflowers in the beaten eggs and then panko until completely coated.
  5. Transfer the prepared baking sheet and season generously with salt and pepper.
  6. Bake for 20 to 25 minutes until they are golden brown and crisp.
  7. Meanwhile, prepare the sauce in a small bowl and combine the water and cornstarch. Stir it until the ingredients are completely dissolved.
  8. Now combine soy sauce, lime juice, honey, garlic, and sriracha in a small saucepan over medium heat.
  9. When the mixture boils, lower the heat and add the starch mixture. Heat it for 2 minutes till the mixture boils and the sauce thickens.
  10. Toss the cooked cauliflower in the sauce until evenly coated.
  11. Now return the cauliflower to the baking sheet and roast it for 2 minutes.

  • Cherry Tomatoes – 1 Point
  • Olive Oil – 2 Tsp

Procedure:

  1. Move the oven rack to the top third of the oven and preheat it for a high heat broil.
  2. Cover the large baking sheet with foil.
  3. Cut off the top of the garlic head and drizzle with a teaspoon of olive oil. Now season it with salt and pepper and wrap it in foil.
  4. With a fork, prick the eggplants all over and place them with garlic on a large baking sheet in the oven.
  5. Grill, turning occasionally until the eggplants are tender inside and charred on the outside. It will take up to 30 to 35 minutes. To check the doneness, use a kitchen knife and insert it in the center of the eggplant. If there is a resistance, then continue broiling.
  6. After that, let the eggplant cool for 10 minutes and then open it to remove the pulp. Remove the skin of the eggplant and place the meat in a colander to drain for 30 minutes and stir after 15 minutes.
  7. Combine the eggplant, lemon juice, and roasted garlic cloves in a large bowl. Mash the garlic cloves with a fork while stirring the eggplants and lemon juice.
  8. Add tahini and 1 tablespoon of olive oil and grate the remaining garlic clove in the bowl.
  9. Stir the ingredients for a mixture and then season it with salt before transferring it to a platter.
  10. To serve, use parsley, pepper flakes, and a drizzle of olive oil for garnishing. On a platter, serve the toasted pita bread or vegetables.
